will the USCIS will know if you ever register to vote when you dont tell them about it on your interview, still a permanent resident in USA when registered, but canceled it already.

They will know or they will find out eventually and then your headaches will start. The rule is: Never lie to USCIS!

I hope you just registered accidentally and that you did not vote in an election.

On form N-400, Part 10, Question A.2 "Have you ever registered to vote..." did you already answer NO? In case you did, you should correct that during the interview when the officer goes over your N-400 form since your answer should have been YES. Take evidence with you that you already cancelled your voter registration since they will ask for it and be prepared to answer the circumstances why you registered.

USCIS can find out all sorts of stuff about people if they want to. Read the following thread:

You need to admit that you registered, and you also need to get a letter from the voting authorities (whatever they call them in your state) to confirm that your registration has been cancelled, and that you never voted. If you actually voted, don't ever apply for naturalization; that could get you deported.
