When is it safe to change field after I-485 approval?

Hello: I've been reading everywhere but I have not seen anything definitive, just speculations.

When is it safe to switch fields after I-485 approval on an EB-1? Say, I am a PhD in theoretical particle physics with lots of math and computer skills, and I am using these skills to work for an investment firm on Wall Street. Should I wait a 0.5 years, 1 year?

Technically you are free to do what you want as soon as you get the I-485 approved. But, I have also read that yo are expected to stay wthin your field for 6 months and even 12 months following the approval, but who's going to check on that? But, to be safe I would stay within occupation for 12 months.
