Mine and my spouse 485 are pending. I've a EAD but never used it so technically I'm on H1 and she is on H4......

She plans to work using her EAD when she gets it. If I continue to maintain H1 status and she works using EAD, what will be her status? will she be pending AOS or H4 or something else?

Sure why not? The only problem is if your I-485 is denied for any reason then she will be out of status, you will be fine, and will have to go out and get the visa stamp for H-4 to come back to the country.
