Hi,
This is a hypothetical question.
What if I don't have permanent employment at the time of I-485 RFE?. I have been working until this point but if something happens and I lose my employment?. I have approved I-140 and I-485 filed 18 months back.Please tell what should be my strategy at that tight corner.

That's the situation in which you definitely don't want to be.
After reading many threads here, there was usually one solution - go find a job quickly if you get RFE. You usually have 60 days or so to respond, so you have to be really fast. Or do it semi-legally by finding a job at a "desi company" (whatever that is, I'm just telling you what I remember from posts here) and get EVL from them when asked.
 
I argee with rurux - if you do get laid off and have an RFP - get a job or find someone who will write you an EVL etc.
