My I140, I-485 are under concurrent processing and 180 days passed since then. I have an EAD too. In the event of a layoff can I :

a. Accept a job with another employer in the same status?
b. Start a company of my own and resume the processing under that company's name?

You can try and use AC21 to change employer while preserving your GC processing. But I heard that recently BCIS has started counting 180 days for AC21 from the day I-140 is approved if I-140 and 485 are filed concurrently.

You cannot start a company and sponsor yourself (or any close relative)for a GC.
