Visitor Visa - Sponsor is currently unemployed

I am a US permanent resident. I am planning to sponsor a tourist
visa for my mother, who currently lives in India.

1) One of the required documents is an employment verification letter
from the sponsor. I happen to be unemployed currently although I have
enough funds in bank to support her visit. Will the lack of an employment
verification letter from me be a problem in this case? What other document
can I show?

2) My mom has already visited US once in 1998 on a tourist visa and returned
to India on time. She also planned another visit back in 2001 and secured
a second visitor visa. But she had to cancel her travel plans later due to
some family emergencies. Does the fact that she didn't get to use her visitor
visa once create problems when she applies for a visa now?
