visa stamping @ Calgary

Hi,

I'm planning to schedule an interview for visa stamping at the Calgary consulate in Canada. After going over the accounts of various people who have made a trip to Canada, I get the feeling that things work out smoothly as long as you have all the paper work in place. Below are some issues that I need a second opinion on:

My Background:
F1 -> OPT -> F1 -> H1B

Issues:
I got my H1B petition approved in January and have started work ever since. My employer is a small consulting company and AFAIK I'm the only employee they have who's on a work visa. I know that the consulars ask for recent paystubs and I've a problem here. Due to some problems in payroll, I currently have just two paystubs on me (for the month of April) that cover all the backlogged hours that I've been working since January. Will they make this to be a big issue?

I've an offer to start with a bigger (much better established) company two months from now. Personally, I feel much more comfortable getting my visa stamped after I've made this trasnsition. Is there lesser risk involved when the petitioner is a well established multinational?

Also is it safer to go for stamping in your home country as opposed to Canada? I hear that since January, there is some chance that the stamping process might take more than 3 days. Has anyone been stuck in such an unfortunate situtation?
