Validty of Labor Certification. How long can I140 be stalled for?

My Labor Certification has been approved but I want to leave the US for a period of may be 2 years, work for another company in India and then if I dont like it there, come back to my current employer.

After 2 years, can my employer file for my I140 directly or will I have to restart my Labor Certification again?

Specifics:
Labor Priority Date April 1st 2001.
Labor Approved April 7th 2003.
Wish to leave US Oct 2003.
Wish to return to US Oct 2005 (potential).
 
Valid indefinitely with the caveat that it is not used for someone else as a substitute labor while you are away.
