US CITIZEN PETITION WIFE w/EUROPEAN PASSPORT

I am a citizen petitioning for my wife who is both dominican and italian. Has dominican passport with expired US visa (9/13/09) and entered the country legally on sept 16, 2009 with her european community passport.

She has been given until dec 15, 2009 to stay in the usa.

I want to start her process but there are so many forms I will go crazy. First I thought it was only i-130. Then I found out about i-485 because she is already in the usa. Then found out about petition for workers permit which is i-765 and lastly she wants to go to the DR in december so I will ask for i-131.

Am I missing anything yet?

One more thing. Back in 2004 when she graduated from the Culinary Institute of America she had a workers permit until 6/26/2005. Should I even bring this into play? Should I bring her F1 visa into play also? It expired in 2005.

Please help. I don't want to be sucked dry by lawyers, I did my own N400 and got my papers in 90 days. I know, right?

Another question. Since she has an european passport thus not needing a visa, should I not apply for the i-131 abd she can still travel?
