My employment letter is of June Date and H1B stamping interview in July (one month differnce) . Is It okie to use One Month Old employment letter in h1b stamping interview ?
 
What do you mean by "employment letter"? If it is a letter (not the appointment letter) from your employer verifying your employment, then it will be advisable to get a current one.
If it is the appointment letter, then it should be okay. But it is always a good idea to have a recent employment letter as a proof of continuing employment. Also don't forget to get recent paystubs with you.

This is employment verification letter. It was given to me on my request of Employment verification Support for h1B samping. But I got my interview of date in July end. thus it is one month difference.

Pay Stubs are only till the date I was in USA, after that I wasnt paid anything so no pay stub. Will it give some problem. I am working on hourly basis.
 
Ask Your employer to send a new employment verification letter( as your appointment is at the end of July ).
With regards to the pay stubs get all the paystubs upto the day you left USA and that should be no problems( Since you are on vacation).

Do we need to send original pay stubs for H4 visa stamping in chennai or photo copies are enough? My only concern is losing paystubs when I send them by mail.

You dont need to send the originaal pay stubs .. Copies will do
But if you still want good measures
you can notary them and send .
