My wife has her green card interview in a few days and we're kind of concerned about the questions about how we met, first date, etc.

Our marriage was an arranged marriage. We spoke over the phone (me from US, her from India) for about 6 months before I went to India. We got married 4 days after I arrived in India.

We've been married for 5 years, living together in Saudi Arabia for four years.

What advice do you have for us in regard to answering the questions about how we met, first date, etc?

Relax.

People who just had an arranged married a few months ago might have a problem at the interview, but with you having completed 5 years of marriage, the fact of your arranged marriage will not be a problem. Just tell the plain truth like you did here, and your interview will be very easy.
