OPT related question

Dear Sir,

I am currently doing my Masters (MBA) and completed 3 quartes and three more to go. I finished PhD in Plant Genetics from India before coming here. The reason I am doing this Masters is for a work permit. The college I am studying allows me to work on CPT while still in the college. I can get an OPT period of 12 months if I finish MBA. There is another possibility in my college. I can switch to MS-IT since some of the courses are common. The advantage with MS-IT is I can get 29 months of OPT. My question is if I finish MS-IT, would I be eligible to work as a Scientist in my field (Plant Genetics)? I already worked for some time for a company as Scientist and had no problem with MBA. They stated my designation as a manager.
Will there be any problems in the future with H1-B processing and GC if I switch to MS-IT? Please advise me.

Thanks
Dave
