I (primary applicant with my husband as derivative ) filed for the I-485, EAD,AP on 1st July with company XYZ .
We received our EADs but are still working on H1-B visa. I got laid off in mid-August and I joined company ABC ( would use AC21 after 6 months) .

Now, my husband has also filed for I-485 by himself on 25th Nov ( showing me as derivative ) - using previous company's approved I-140.

Now both our AOS's are pending at VSC.

Will it cause any problems in getting the Green card?
Can he convert his AOS to CP later ?
Is there a AC21 for CP ?

No. you can have both GC process simultaneously.
Can he convert his AOS to CP later ?
Yes... but sooner the later. I824 takes about 10months in VSC.
Is there a AC21 for CP ?
Unfortunately, NO.

one last clarification-

the company in our case is the SAME - who filed my I-485 and the one which my husband used for filing I-485 using approved I-140.

Can that cause any problems?

No it won't. As far as they are based on different LCs, you will not have any issues.
