I am on H1B, but recently moved to a new employer and transfered my H1B to the new employer.

I am planning to visit India and would like to know whether I could use my old visa stamp on my passport (which will expire only on 05/05/07) to come back to the US? My old employer did not cancel my old H1B. Do I face any issues at POE?

You can only travel, after you have got your h1b approval with new employer. You don't need to stamp it again. On POE, you can show your old stamp with new h1b approval, and you should be okay.
