If everything is in order at the consular interview and your GC application is approved what happens next? Is the I551 stamp issued the same day? Can you travel to the US immediately? What is the process after the interview? I am a DV applicant. Thanks in advance for your help!

It depends on the procedures of the consulate/embassy you're applying at. If your entire application is approved at the interview, and there are no delays (such as for a security clearance, also known as name check), you are free to travel as soon as you get your passport back. This might be on the same day, or a couple of days via courier. Basically, once you have your passport in hand with a valid immigrant visa, you're good to go!
