I did speak to my lawyer - And she said that it should be no problem. However, she said the current company that has sponsered my GC should express intent to hire when Green Card is received. Just a letter will suffice.
My guess, is that it should be dated close to your GC approval.
Remember that the entire Green Card process is for a job in the future and the company should be ready to offer you a job
