Suggestion needed to figure out path for renewal of F-1

A little background. I am a Pakistani citizen, I have been in the US for almost 11 years. I came to the US for college, went to a very reputable university and got two degrees for my bacholers. My visa was for 5 years and after 4.5 years, I went back home for a visit. After my bacholars, i switched over to my PhD program which is also at a reputable university. i have not gone back home for the last 6 years nor have I renewed my original visa ever. I have been in constant student status and hence have been legalin the US.

The situation:
I have been invited to the middle east to interview for academic jobs there. i will need to renew my visa while i am in the UAE and am thinking of doing the renewal in the UAE rather than in Pakistan. I am teaching this semester and would like to return ASAP. Also, after I return, I will defend my dissertation.

The suggestions needed:
1. Do you think it is a good idea to apply in UAE rather than going back home to apply in PK?
2. I am especially concerned about my security clearance situation which can take a lot of time. I have been clean in the US, no problems, clean record, never done anything shaddy, all taxes paid, legally worked at jobs throughout my time here. I have a very unusual name for a Pakistani so it shouldnt conflict with someone else's record. Do you think there is a possibility they wont order a security clearance for me so that i can return quickly to continue my teaching/research?
3. I have a very good idea of the documents i should take but do you have any suggestions of the kind of documents that can help me.
4. Anyone who was in a similar situation that can share their experience with me?
