My 485 is pending. I have applied for my 3rd EAD renewal before 3 months of current EAD expiration. There was an RFE that my supporting docs were not available. I have all docs immediately. Current status is still pending. My EAD is going to expire in couple of weeks. Do I need to stop working till I get approved? I dont have H1b.

I believe if your EAD card lapses you have to stop working. You might want to check with your lawyer if you have one or do some more research.
If your HR dept. doesn't notice this, its possible you could keep working but you'll probably accrue unlawful days for the period you don't have an EAD, so its probably risky.

Do not work without a valid EAD. It is illegal will get both you and your company in trouble. You will not accrue unlawful presence for days that you don't have an EAD; i.e. you will still be legally in the US as long as your I-485 is pending, but you won't be able to work until your EAD renewal is approved.
