Once we receive the American passport - are we supposed to sign the passport with our normal signature OR are we supposed to use the full name version that we used on the N400 form?

At that point, you are a US Citizen. I can't imagine normal US Citizens thinking so hard about something like that - they never have to deal with the USCIS.

Just sign whatever feels comfortable.
 
I always advise to be consistent on all your "real life" documents (i.e. driver's licenses, credit cards, bank account checks, social security card, passport etc). In that case you do not have to think too much every time you sign something.

As for "USCIS documents", so far I used my real life signature for all USCIS documents where ever I was asked to sign with no objections from IOs. I however was told by someone on this forum that Naturalization Certificate may be the only exception. I am practicing my English cursive as we speak for this only document.

You are supposed to put in your regular signature on your passport - similar to what you did while opening your bank account and the way your signature appears on your driver's license.
