I want to file I-485 next month. Should I include this conviction in my I-485 application?

if you have an attorney you'd better consult with him/her for the sake of good order. Yes, you have to mention that unfortunate incident happened when you were in the minor. If you take a look at the I-485 application, it clearly says "Have you ever, in or outside the United States...". For the record, you have to attach a copy of disposition from China, which I believe should be notarized and translated into English if only Chinese copy is available.
