If there is an RFE to submit tax documents, how many years tax documents will they ask for ? Will the current year be enough, if nothing is mentioned ?

They will mention. Normally it's "last" or "last three years".

Three years or They will ask for the years after your last entry in US before filing the I-485. Which ever is lesser.
