If you are sending that document please send a certified copy. If your attorney is sending the documents, he will take care of it. I guess his covering letter indicates that the documents are certified.
You can also get certified copies of your W2 from human resources. They will stamp them with an official company date-time stamp. I sent these with photocopies of my w2s (best to keep originals).

And did you not submit your employment letter when you filed for 485? Or are they asking for it again, even though you submitted these before.

I got same RFE , my lawyer said no need for a notorized copy, just a copy would be fine. He said he has handled more than 30 RFE cases in last 5-6 months.
