HI,
USCIS has asked me to submit copies of my personal back account for last 3 months. I have never heard of any one being asked this question. Does any one has any clue as to WHY would they ask this? and/or has USCIS asked any one else this question?

wow :)

I've no idea why USCIS wants to know about ur bank acct. I suggest you post this question in main 485 forum to get more responses.

Probably it's ability-to-pay issue. Are your company's paystubs non-standard or manual? It seems USCIS is not convinced with the paystubs and therefore wants to check the desposits.
On the other hand, you are not working and still have the GC job offer, they want to figure out why you are not working with GC sponsorer.

How can this be checked with bank account? Do they want proof that you are able to support yourself without a job from our bank statement?

Are you working with your GC sponsorer? If not, probably USCIS wants to know how you are making your living.

Just send the statements man ...
They want to see after getting GC approved, you are not going to be depending on uncle sam....

I am no longer working for my original employer.

I guess you are invoking AC-21. In AC-21, ability-to-pay is not an issue. However, you still need a valid job offer/EVL for "same or similar" position.
