RFE after intensive interview. What's your opinion?

Hi All:

I am new to this forum and would like your opinion on my current pending case.

Background Info:
I am an US citizen. In Jan 2012 I divorced my ex-wife whom I have petitioned for green card back in 2009. I got remarried in Nov 2012 to my current wife, who came to the states on a tourist visa in March 2012. I am currently petitioning my current wife's green card.

Interview:
So we went to our early AM interview on 03/04/2013 in downtown San Diego. The interview was intensive, nerve-racking, and really long (about 40 minutes). Well, I kind of knew that the interview wasn't going to an easy one given how close my 2 marriages were and I am petitioning again. I think we did ok in the interview, granted my wife didn't speak very good english. Overall we provided most of the required docs (joint lease agreement, bank statement, utility bill, pictures...etc) and most of our answers were good and on point. We did hit a couple bums on the road though. The very first questions the IO asked my wife was her date of birth. Instead of 1983 she said 1987 (OMG really....it went downhill from there I think). Then somewhere in the middle of the interview when the IO asked about the date and year we met, we were answering with the same date but different year (the answers were 1 year apart). We eventually got it straighten out after the IO asked more questions regarding the time we met. At the end of the interview the IO said that everything looked good, but since we didn't bring my wife's certified copy of her birth certificate, nor our 2012 joint tax return (she just got her SSN in the mail today 03/05/2013) the IO issued us a RFE requesting the docs mentioned, plus a affidavit form from each of our mothers who attended our wedding as an optional doc, within the next 58 days.

Questions:
1) Once we fulfill the RFE and get it mailed in, do you foresee any problems from that point forward based on how intense the interview was?
2) Do you think I should provide the affidavit even the IO said it was optional?
3) If affidavit is needed, should I get it certified with the copy of their ID?

1) Once we fulfill the RFE and get it mailed in, do you foresee any problems from that point forward based on how intense the interview was? No fortune tellers here. It could go without a glitch, and it could also devolve into a nightmare
2) Do you think I should provide the affidavit even the IO said it was optional? Are you serious? Your case is already a red flag case and you're nonchalant enough to consider skipping the affidavit because it is optional
3) If affidavit is needed, should I get it certified with the copy of their ID? Get it certified
