As long as it is valid, you can use it to return even if it is valid for one more day. That's why these dates exist - they are solid validity dates and not "suggested" or "approximate" dates. 
By the way, if you receive the new one (while you are out), it cannot be sent to you for the purpose of using it to return. You can only use an AP if it was approved before you left. The new one can be used for future travel after you come back, but the AP you had in hand when you departed the US is the only one you can use to come back with.
