How can the USCIS can track I have used EAD to join new employer after 180 days, since with the same EAD, I can join my last employer and get the
Employment letter and pay stub at the time of Interview in local district office?
 
Here is Friendly Advise and personal opinion

Don't expect them how and why, the long story short the ball in their court they have options ..... think what option u have.

I learned that many people followed the rule.
"Didn't Ask. Didn't Tell."
"Tell them only What you are asked"

Do Not try to hide any info if they have clearly asked to you, nor Submit/declare any false doc/statement. once you do than backup would be painful.

Try to avoid any trouble

They can't tell. (or at least they won't use the tools available to them like the IRS) That's they will send you an RFE if they want to find out from you, instead of looking you up in the IRS. Some people don't get an RFE, others do. You would then need to quote AC21.

Even if you tell them up front that you used AC21, they still have the potential of ignoring you. They have way too many cases to go look for yours when you send an update for AC21. The whole place is a mess.
