reapply in EB2 or stay in Eb3?

I just found out I have to wait 5-6 years to even apply for my I 485! :(

I applied for EB3 because my employer would not pay me the prevailing wage. I have a 3 year college diploma and 8 years experience.

Should I start the PERM over again in Eb2 and just change employers once I 485 is filed to get around prevailing wage issue?

Since the LC to I 140 only takes about a year, and EB2 is current, I think it might save time in the long run, or will I run into more risks than its worth?
 
It could be. You must pass LC and with the number of unemployed professionals ... as the saying goes, a bird in the hand ....

By the way, it depends on the job - not your experience for category. You may not get any benefit.
