If you already have your I-140 approved then this article might be of interest. It says that the 180 days are really not how long you had the job, but that it took the INS at least 180 days for processing your I-485 (which they will at their current pace).
Also, many people on this board stated that once you have your GC it would be better/save if you stay at the company 6 months to one year longer, but many GC holders seem to have had no problem switching after less than 6 months (you probably don't want to switch the day after approval.) I don't know how it is if you get laid off soon after approval. Does anyone have an answer for that? Once you have your employment based GC for 5 years you can apply for citizenship and at that time INS will review your employment history and some people on the board said that the INS could cause trouble if they see you switched soon after approval. However, if you don't go for citizenship then it shouldn't matter much unless some person (any person) believeably claims to the INS that you had no intentions to stay with your company for a long time, but that you were all along looking to switch companies (this would be considered GC fraud). So you better keep your strategies to yourself.
