I was working for a client for employer "A" . Client hired me as a permanent employee, employer "A" promised to keep the green
card process going.

Here is the sequence of events:

Labor was filed in March 2001,
Joined Client of employer "A" in Aug 2002
Labor Approved on Sept 2002
Applied for 140/485 Concurrent on Dec 2002
EAD/AP Approved in March 2003
I-140 Approved - Aug 2003
Applied for EAD/AP Renewals in March 2004

Now, what is the best option for me, to file AC-21 with my current employer (And Can I do that).

Or

Keep the process going like it has been going so far.

Concern is if I get an RFE like one person got today, that if you are not working with the I-140 sponsoring employer today, pls. explain why. In this case what can I do?

Both current employer and GC sponsoring employer are very favourible to me and can help.
 
I would say, wait until you get RFE. It would be interesting to see what other specialists like ginnu, RealCanadian, OmGV, vijayrc , sam99 has to say.
 
I would say that you're lucky that both the sponsoring company and the client (your current employer) are doing their bit to keep your GC process going. As of now, you don't need to do anything. You can wait for an RFE, if any, and provide documentation through your current employer (the client). That's all. Take it easy.
