question about prove of employment

My company's lawyer plans to file my LC case as RIR in California. But they can only file my case as BS with no experience, though I had been working as software engineering for several years before.

The first 4 years after I graduated, I worked in my current company's full owned child company in China, which the lawyer consider this can't be count as experience before I joined my current company. Is that right?

My next 1 year I worked in a company in China, which I can only find an offer letter and since the company not exist any more, I can only get an employment verification letter on plain paper (no company title paper) with my ex-boss's signature. I don't have any pay-stub. The lawyer thinks it is not substantial proof of experience. Can be a risk at DOL. Is this right?

Next 11 month I worked for a company in bay area, but since it is 11 month, can't be count as experience.

So anyone has any idea if an offer letter on company title paper and an signed employment verification letter on plain paper is enough proof for experience?
