Question about Civics Test

Can someone please clarify how the civics test should be studied and answered... there are questions that say answer one or two, but then there are questions that doesn't say name one and has a bunch of answers.

For example:

What is one right or freedom from the First Amendment?

* speech
* religion
* assembly
* press
* petition the government

Ok, so you name one. But then there are questions like:

What does the Constitution do?
* sets up the government
* defines the government
* protects basic rights of Americans

Are you supposed to remember and answer all of them or just pick one?

Also, for the writing part, what does this mean? "You must write one sentence, out of three sentences, in a manner that would be understandable as written to the USCIS officer."
 
If teh question does not say "One", then one answer is enough.

The IO will read one sentence and you write it down. If it is good enough, you pass. If not, the IO
read second question and ask you to write down again. If it is good enough, you pass. If not, the IO
read third question and ask you to write down again. If it is good enough, you pass. If not, you fail
and will be scheduled for anotehr interview
 
This is totally my experience so of course it could/would differ from others.

Civics Test: I just memorized all the answers.
Writing: First I was asked to read a question. Then the officer asked me to write the answer to the question.
