Hi,

The company where I worked three years back (Got my labor approved in Apr 2001 with that company) is willing to continue Green card processing for me. Now I am not working for that company. My Question is, as the labor was approved 3 years back, is it still valid to file 140/485 through that company?

Yes it is if they can show that they are still willing to hire you after your green card...
 
In the world of immigration based on employment, there is not a bigger waste then "wasting an approved LC". Once LC is approved, it's valid indefinitely.
