Is it ok to provide INS with a POBox when we do a change of address? I changed my address - but am in a job which requires me to change cities often - so I am staying at company apartments, etc... -

Can I give INS a POBox when I fill out the AR-11 form?

I don't think so unless you are really an alien living literally
in a p.o. Box like that movie Men in Black II

The instructions for AR 11 do not exist. The form itself doesn't prohibit you from putting P.O. Box.
