I have a pending 140 and 485 and want to leave sponsoring company. If i can convince them to continue my petition, what happens when/if either or both is approved? Do i need to go back and work for sponsoring company? any insight greeatly appreciated.

If your sponsoring company supports you can leave the company. Once approved it is not mandatory you need to work with sponsoring company.
