Please help if you can (EA/NIW)

I filed I-140 (non-concurrent) 11 months ago (ND: 10/02) under EA and NIW. I did self-petition through a lawyer. No approval or RFE yet.
A company wants to hire me. My question is: Can I have the company file my I-485 and EAD? (I have a copy of I-140 receipt) OR do I have to go through my lawyer. If the company can file for me, do I have to inform my lawyer? I would appreciate your input.

You file your own (with your attorney). Your company has nothing to do with these petitions.

Does this mean that employment letter is not needed as supporting evidence for I-485?

No, it does not mean that. You will have to show that you will be working in the field in which you are approved for and have the ability to support yourself and your family.
