New applicant to Canadian PR

Hey gurus my friend will apply in skilled worker category for Canadian PR by the end of this year. He has 2 years of exp. here in USA and 3 in his native country. My question is that what kind of proof he has to show at consulate for that 3 years? He was paid cash all the time there, since paying tax is arbitrary he didn't get any pay stubs or such.

He only has to show his work experience on a letter written by someone in that organization, not how the salary was paid.
