need to update when changes to affidavit of support

When my husband and I filed my 485 along with affidavit of support he was self-employed. He has now accepted a new job with a company-do we need to make that change with USCIS or just wait until our interview to produce pay stubs and employment evidence then? The change in empolyment will reflect an increase in salary, not a decrease.

Your husband can fill out a new Affidavit of Support if he likes, and take that along with the job evidence to the interview. If the interviewer asks, then give them this information. You do not need to volunteer this unless asked to do so.
