If you go on your employer's health insurance plan, you willn't need SSN . However if you try to buy a individual insurance plan on your own the insurance company generally doesn't give health insurance till it sees SSN or ITIN etc. However this varies from state to state and lot of states give you health insurance without SSN.

Under my employer group plan, they ask for SSNs for all dependents if they are covered. Since my kids weren't eligible, I just left it blank with no problems. In your case, I would just put "Applied For" and if they want it, they will follow it up with you and you will hopefully have the SSN by then.

Depending on your Employers Insurance Plan and the type of plan you chose -Individual Or Family coverage, you get the coverage for Medical Insurance.
If you have coverage for your family , then you dont need any extra insurance for your dependents - they are automatically covered irrespective of SSN. You may want to add your dependents in your insurance ASAP.
In my case when my wife arrived to US with H4, I just added her in my dependents by sending a fax to Insurance provider. Unluckily she had to go for a doctor's Visit in 2 days and the database of Insurance was not updated with her name. So we paid for all the Medical expanses like 'uninsured' and later claimed to the insurance company.
This might work for you too. So you may call your Insurance provider and ask about your coverage. Not having SSN is not an issue. Coverage is for you and your family (if applicable).
