Need help understanding my options to get an H1 visa stamp

Hello,

This is my story: I came to the US in 2001 on a tourist visa and was accepted to a university to do my Bachelors in Computer Science. I did a change of status and was given the F1 status to start and continue my education. I've been told then, that if i leave the country, i need to apply for the H1 visa from the US consulate back home but knowing that that might be risky, decided to wait until i finish my education and degrees and get my work visa. I finished my bachelors and then masters, and now working for a highly known and respected consulting company. I got my H1 status from them and thought of going home for the holidays but i know that if i go home, i still need to go to the US consulate and get the H1 visa on my passport to be able to come back and enter the U.S. People around me keep warning me about the risks that the US consulate might not give me the visa and so on.... so basically i've been here for 7 years and thinking of waiting till i get the GreenCard so i can go visit my family back home unless i have other options which is why i'm asking you.
