I guess your wife should come back for fingreprinting. As far as I rememeber, but I am not 100% sure, you can reschedule the appointments for a later date but no more than 90 days after the FP date you have got now.
Or - you risk to wait much longer - some people get their approvals soon after 2nd FP (from what I have seen in this forum. Why postpone the process which has been slow already.
Should consult a lawyer anyway.

you can rescheduled and you write one letter with possible dates,

I did it, but they resheduled it after 15 days

You can reschedule your wife's FP date, shouldnt be a problem.

you may delay the FP of your wife for more than 90 days if you get the local office approval, but this will delay your wif's GC.
