Need advise on visa stamping in Canada or Mexico

Hi,
I am from Mumbai , India and I recently found out that the Mumbai Consulate will not be scheduling H visa interviews till later part of this year. To interview at either New Delhi or Hyderabad , the documents need to be submitted in person a couple of working days in advance which may be difficult. I am thinking of visiting India in 1-2 months time and hence I thought I would get my visa stamped in canada or mexico before making a trip to india

My background
Graduated with a MS degree in Dec 2008.
I joined a consulting firm in April 2009 and worked with them on my OPT. I got my H1 B through this firm in Oct 2009. I got my first project through the consulting firm in August 2009. I have been working on this project till now. I did not leave the US in this period and so have not had a H1 B stamping yet.
I just received a full-time job offer from big US firm and they have started the process for my H1 transfer.
I will be joining the new company as soon as I have the H1 transfer receipt. If possible I wanted to go to india after 1 month or so of joining the new company and with the Mumbai consulate being closed at that time, was planning to get a the visa stamped in either canada or mexico before my trip.

It would be good if somebody can advise me if there are any risks for my situation or tell me about some recent experience in either countries. Thank you in advance.
 
Thanks nkm-oct23 for the information, I will try to find out information about chennai consulate. Also, after reading recent posts on this forum, it seems that now if a person goes to canada for stamping and it gets rejected, the person is not allowed entry to the US. Is it correct? Is the same applicable for Mexico too?
