Please help .. GC interview in 2 weeks

My wife who is a USC sponsored me for my GC. While filing the papers we both filed I-864s as we both had jobs. Following that we moved to WA state. I have been unable to find a job since then. My wifes income helps us go over the poverty level, but barely. Both our incomes were under the poverty level till 2001 as we were in college. For the years 2002 and 2003 our incomes went over it. As you can see we did not have a steady level of income over the last 3 years.
We have decided to use my mother in-law (also a USC) as the Joint Sponsor in case the INS questions us about not steady income over the last 3 years. Is this possible. If yes, what forms does she need to file (I-864 or I-864A). And what kind of documentation from her end do I need to take to the interview.
Please help as this is a matter of great urgency. My interview is in the first week of June.
