Letter from current employer

I am sponsored by my wife and our initial interview is in one month. Only her income has been used in order to clear the poverty line thing.

My last paycheck with a "normal company" was at the end of April. Since then, I am working with an entreprenur on a new product. But for the time being, I have not collected any money, and I won't for the next 2 months.

Should I get a letter from the entrepreneur guy stating that "I am working with XYZ on a new product"? Would it help?

My guts tell me that being unemployed is no big deal, and that a letter saying that "we are working on a new product" has as much value as a letter that says that "we sometimes go fishing and have a couple of beers on our way home"... Am I correct?
 
Well, since you are in a project right now is not consider that you are working in the way that you are receiving a salary for it. You were working until April, and that is fine. Anyway the most important thing is that your wife salary is the one who is meeting the requierements of the Affidavit of Support and did not depend in yours.

What you can do is to get a letter saying that you are working in a project and you will be paid at the end of it, is that will happen or nothing, just that you are not working "for salary" right now.

Is not a must to bring your paystubs to the interview or be working for that matters (there are people that does not work since even their EAD did not arrive on time), they probably will ask you " are you working right now?" and then depending in your answer you can show what you have. If your past salary was use for your joint tax returns just bring your latest W2.
 
If you're not the sponsor being unemployed is not a problem for the interview. They will ask you if you're working and you can explain the situation. I know you're not unemployed but working on a project that does not draw immediate payment.

When I went to the interview I let them know I was unemployed because I had just gotten my EAD and hadn't had much luck and that was it. No big deal.

Since you did not use your income to qualify, it doesnt matter if you earn or not; are employed or not. Dont worry, but make sure you take all tax documents of your wife to the interview
