You want to change your last name as part of the naturalization process itself, or outside of naturalization? Expect issues both with your naturalization and your spouse's GC if you change it outside of the naturalization process. Especially name check ... both your old and new names will be checked if you change it before, thus doubling your chances of getting stuck.
