When you are called for interview let the interviewing person know that your employment status has changed. No need to do anything now.

No need to file any amendments. If IO asks you during the interview whether you are still working or not, you can tell him, but it won't affect obtaining your citizenship.

being employed isn't a requirement for citizenship. Actually, USCIS prefers the unemployed, so that you won't miss any appointment.. Just find a new job soon, nothing terrible like running out of money, while awaiting citizenship...
