K1, K3, CR1 visa?

My fiance and I are wanting to get married. I am a US citizen and she is a Mexican citizen. We would like her and her 2 children to join me here as soon as possible. What is recommended K1, K3, CR1?
Her father is quite ill having had a coupleof strokes, we want to make sure that should anything happen, she be able to travel to see him. Do any of these allow for that?
How long would it be before she were able to come to the US?
I heard somewhere that the CR1 allowed the petitioner to travel back and forth while in process, is this true?
 
I thought I had read in another thread that they may be able to travel while its being processed, meaning during the expected 7 month wait.
 
Im trying to understand processing times. The I-130 shows 5 months, does this mean that she should be able to be here in 5 months? Or is it 5 months for that form, 5 for the next, 2 for the next.... and so on?
 
5 months means the processing time of the initial petition (though of course each individual case is different so yours could be more or less than this). After the processing of the initial petition is complete, it is then sent to the specified embassy/consulate where your wife/fiance lives where she will then be invited to come and interview. Tack on an extra couple of months for this to be complete and until she will have the visa in her hand.
