Yes, you can but it is a little tedious. First, you will need to file the I-140 and I-485 simultaneously. You can leave your current employer if the following conditions are met:
1) The I-140 has been approved
2) The I-485 filing has been pending for 180 days
After all that you would file the AC21 to make the transfer official.
Dig around the 140/485 concurrent filing threads and the AC21 portability threads. Enjoy!

This is just a rant and not directed toward you, tt015.
Why doesn't this forum have an FAQ section?! People are coming here to learn the basics first and instead have to read garbage they don't understand. Then the new poster end up posting the basic question, which no one responds to because I guess the veteran posters beleive the poster should know that!! Mods - add an FAQ sticky and dig through the search engine to get the list going! I'm sure this thread is worthy of a damn sticky!!
