Is RFE for employment proof pretty normal?

Who knows.... Still I would say it
depends on few factors. One is what kind of Employement Letter has been sent along with 485. If the letter sent says only about the current employment situation and doesn\'t say a thing about company\'s intention to continue emploement after GC approval then case officer might wanna varify employement since it could be a long time since letter has been written and the case being approved. (Remember 485 is for future job and has nothing to do with your current job except that your legal status when 485 was filed). Second is if any H1-B is approved after 485 for another company, most probably if someone is using AC21 and doesnt wanna uise EAD. But overall I\'ve not seen any particular pattern in Employement related RFE.

I extended my H1....
I extended my H1 for the GC sponsering employer before filing for I-485 so this should not cause the RFE to be issued.
I don\'t remember the content that was used in the employment letter submitted with the I485 application package.
The only thing that I think that may have caused this to happen is that fact that I traveled after I-485 was filed and used my H1 visa stamp at the POE. The other thing could me renewal of H1 visa from department of state after I-485 was filed.
