Whether you use AC-21 or not employer should not revoke an approved I-140 in less then six months from I-485 RD. Once you complete six months even employer revokes I-140 the BCIS is going to send your NOID. You need to answer to NOID within one month. NOID answer will contain letter will be your new employer letter and may be some reference to AC-21.

Once you complete six months If you have fear that employer will do some thing keep some other company ready. You should be able send NOID response within a month.
