I'm applying for I-485 and I need a co-sponsor, she has the last three years tax return, does she also need to show proof of recent employment like pay stubs to qualify as a sponsor?

Yes. She needs to show her current employment letter and pay stubs. Also she will have to show proof of money in her accounts ( like savings stocks etc).
